Executive Summary

The growing global population and the prevalence of life-threatening diseases are major concerns in today's world. microencapsulation is a widely applied technique in the drug, cosmetic, and food industries. It can be considered as the technology of packaging small active compounds such as antioxidants and enzymes into cells with semi-permeable walls, known as carriers. Encapsulation protects active materials against light and thermal oxidation through a physical barrier. Various materials are used as carriers, including yeast cells, cyclodextrin, modified starch, and liposomes. However, cost, bioavailability, and legal limits in the food industry necessitate the search for new carriers or covering materials. Nutraceuticals are derived from the active ingredients of foods that positively affect health and can be used in the production of food supplements. Microencapsulated plant extracts, vitamins, and minerals for nutraceutical food applications can be utilized for maintaining well-being, disease prevention, and strengthening the immune system. Unlike most synthetic carriers, we use algae as a novel microencapsulation system, which is considered a complementary food due to its high protein, vitamin, dietary fiber, essential minerals, low production costs, and safety. The heterogeneous functional groups on the algae surface provide a strong capability for substance loading. The algae cell wall, composed of polysaccharides and glycoproteins, defends it against its environment. Microalgae also exhibit anti-diabetic, anti-inflammatory, anticancer, antibacterial, and antiviral effects. Moreover, it has been demonstrated that consuming algae protects people and animals from age-dependent diseases such as cardiac hypertension or hyperlipidemia. Marine forms of algae, commonly referred to as seaweeds, have been used as food and medicine for many centuries.
